Paleo Crustless Quiche

Ingredients
- 1 zucchini grated
- 1 carrot grated
- 6 eggs beaten
- 1 teaspoon sea salt
- 1 tablespoon olive oil
- 3 bacon cooked and crumbled
Directions
Preheat oven to 400 degrees F. Combine the grated carrots and zucchini in a large bowl and sprinkle with salt. Allow to sit for about 10 minutes and drain well. Toss with the eggs and spread in a small casserole dish greased with the olive oil. Bake for 30-35 minutes until eggs are cooked. Remove from oven and sprinkle with the cooked bacon. Serve.
